Beet pizza with sun dried tomatoes hummus and avocado

We all love pizza but know it wouldn't be good for us to have it every day. What better day than today as we celebrate International Women's Day? Here's a delicious healthy beet pizza with sun-dried tomatoes, hummus, and avocado recipe

For deciliters, divide the volume value by 2.366


Pizza crust: 

2,5 dl beet hummus (ready-made or home-made) 

2,5 dl cassava flour (or flour of your choice) 

0,75 dl olive oil 


Sun-dried tomato hummus: 

1 can of chickpeas 

1 clove of garlic 

0,5 - 1 dl sun-dried tomatoes in oil (save the oil)

0,5 - 1 dl basil 

3 tablespoons olive oil (from the sun-dried tomatoes)  

2-3 tablespoons of water 

2 tablespoons tahini 

1 tablespoon lemon juice 




Avocado, pine nuts, herbs, red pepper flakes on top … or whatever your tastebuds crave.



  1. Preheat oven to 200-225 (420 Fahrenheit)
  2. Mix the beet hummus, flour, and olive oil in a medium bowl. 
  3. Make the crust and place it on a baking sheet. 
  4. Bake for about 15-20 minutes until fully cooked.  
  5. While the crust is baking, make the sun-dried tomato hummus: Place chickpeas, garlic, sun-dried tomatoes, basil, olive oil, water, tahini, lemon juice, salt, and pepper in a food processor and process until smooth.  
  6. (If it needs more water, add it and process a bit more.) 
  7. When the crust is cooked, allow it to cool before adding the topping.
